The chef apprenticed in Japanese cuisine in Kyoto and sushi in Tokyo: “I picked up the best of both Kansai and Kanto”. The vinegared white rice is right at home here in pairings of light-flavoured fish with rice in rice vinegar. For the fattier fishes, he uses rice steeped in akazu, edomae-style. The pièce de résistance is the dish with three pieces of tuna. A tamago-yaki with the aroma of maple syrup completes a meal that is inventive at every turn.
