MICHELIN Guide’s Point Of View

Aged beef and organic wine are the signature offerings at this Italian restaurant. Owner-chef Jun Fujiwara’s love affair with beef began in Florence, when he was galvanized by a steak he had there. Fujiwara sources rump, aitchbone and rib roast from a butcher in his native Shiga Prefecture who specializes in aged beef. He seasons his beef with salt and pepper only and grills it over charcoal. A glass of wine nicely complements this simple cuisine.

My family uses environmentally friendly methods of growing vegetables
Which I use at my restaurant. I also contribute to sustainability by using beef from cows that have had at least one calf.
