MICHELIN Guide’s Point Of View

Try seasonal rice gruel in a late nineteenth century storehouse. Large-grained Koshihikari rice from the village of Kijimadaira in Nagano is used to make it. Available year-round, the standard appetiser is tai tsukuri salted and pressed between sheets of kombu. The concepts of Japanese cuisine can be seen in everything, including the focus on ingredients like uni in spring and mushrooms in autumn and the use of dashi made from katsuo or kombu.
