MICHELIN Guide’s Point Of View

Kentan means pursuing things in depth and thoroughly refining yourself. That sentiment can be seen in how the owner-chef gets the water himself from a famous spring. Two kinds of dashi are made: dried tuna for the soup and katsuo-bushi for the cooked foods. The dinner hassun is arranged to express the season by way of references to festivals and other traditional Kyoto events. Another draw is the hospitality of the friendly owner-chef.
