We’re delighted to reveal the MICHELIN Starred restaurants in the ninth edition of the MICHELIN Guide Thailand 2026 — along with heartfelt insights from our Inspectors.

While we won’t spoil all the delicious details just yet — scroll down for our Inspectors’ year-round insights — highlights include inventive takes on tradition, unforgettable seasonal creations, and a dining scene that never stops evolving.

This year marks the ninth edition of the MICHELIN Guide Thailand. Despite global economic challenges, the guide is full of surprises and fresh developments. From Thailand’s second Three MICHELIN Stars to a brand-new Two Star, plus 7 fresh One Stars shining bright, the ninth edition of the MICHELIN Guide Thailand serves culinary excellence.

The latest edition highlights Thailand’s ever-evolving culinary landscape, where global influences meet local pride. International chefs bring fresh energy and perspective, while Thai talents — both seasoned and new — continue to elevate regional flavors. From North to South, each region’s identity shines brighter, celebrating diversity and a deep sense of place.

Many renowned international chefs have invested in Thailand this year. Separately, some who arrived in earlier years have chosen to stay and continue their culinary journey here. These long-term residents are constantly innovating and incorporating local ingredients and traditions into their creations, deepening their connection with Thai culture and offering diners exciting, thoughtful experiences.

A promising trend is the growing collaboration between chefs and local producers. Many now work directly with small farmers and communities, sourcing seasonal ingredients and promoting local products — including tableware and furniture from local makers.

Restaurants proudly highlight ingredient origins through maps, stories, and even herb gardens, helping guests appreciate Thai produce.

Meanwhile, young Thai chefs are returning to their roots, showcasing authentic flavors with renewed creativity. Their pride shines through in both their dishes and storytelling. Beverage programs also shine, with more non-alcoholic pairings crafted from herbs and flowers, enhancing the overall dining experience.

We’re seeing more chef-driven casual restaurants, plant-forward menus, and modern Thai concepts that honor tradition while embracing innovation. Responsible cooking and mindful sourcing are now part of everyday kitchen practice. There’s also a rise in creative, borderless cuisine, where chefs blend techniques and ingredients from multiple cultures to craft exceptional dining experiences.

In summary, Thailand’s culinary landscape continues to thrive with creativity and momentum. From vibrant street food stalls and neighborhood eateries to ambitious fine dining venues, new openings keep the scene dynamic and full of life. Diners are increasingly curious, open-minded, and eager to discover the stories behind each dish. With its evolving food culture and deep-rooted culinary identity, Thailand remains a captivating destination for chefs and diners around the world.
