Umberto Bombana stunned the world with his 8 1/2 Otto e Mezzo in Hong Kong. This is his latest brainchild, after ventures in Macau and Shanghai. The classic degustation menu is the best way to sample his signatures, which are rooted in tradition but jazzed up by modern touches. They go big with the wine list featuring great selections of Piemonte and Tuscan reds. The spacious and striking dining room befits the art-themed shopping mall it is in.
