MICHELIN Guide’s Point Of View

Chef Niederkofler, known to one and all as Norbert, uses typical seasonal and regional ingredients such as mountain pine, juniper, flowers and spices to create his superb Alpine-flavoured dishes. Adhering closely to his “Cook the Mountain” motto, he personally sources these ingredients from local producers. His resulting cuisine is a triumph of colour and flavour, demonstrating sophisticated techniques which more than justify his place in the pantheon of Michelin starred chefs!
