The 2025 MICHELIN Guide Ceremony for The Nordic Countries – which took place at Anneberg Kulturpark in Odsherred, Denmark – saw five restaurants awarded a Michelin Green Star. The Green Star highlights restaurants at the forefront of the industry when it comes to their mindful practices – restaurants which offer dining experiences that combine culinary excellence with initiatives aimed at reducing their overall impact on the natural world. These restaurants are a source of inspiration both for keen foodies and the hospitality industry as a whole.
Every Green Star restaurant is different and works in its own unique way – but all strive to make a difference to the world around them and act as role models to us all. Many work directly with growers, farmers and fishermen; forage in hedgerows and woodlands; grow plants and rear animals; and use regenerative methods such as no-dig vegetable gardens and successional cover crop growing. They also often go beyond environmental considerations to address issues related to ethics and wellbeing, as well as contributing to local, national or global charitable and educational projects.
There is no specific formula for awarding a Michelin Green Star, as every restaurant and its surrounding region has a unique set of conditions. The MICHELIN Guide Inspectors are simply looking for those at the top of their game when it comes to their mindful practices. They consider things such as: the provenance of the ingredients; the use of seasonal produce; the restaurant’s environmental footprint; food waste systems; general waste disposal and recycling; resource management; and the communication between the team and the guests about the restaurant’s initiatives.

Dragsholm Slot Gourmet, Hørve
Already the proud recipient of One Michelin Star, Dragsholm Slot Gourmet can now add a Green Star to its list of achievements too. It sits within Denmark’s oldest castle, which itself sits within a UNESCO Global Geopark, whose undulating landscape was carved out during the Ice Age. Making the most of both its own history and this unique region, its menu is entitled 'Time and Place', with the cooking a reflection of the nearby fields, forests and seas in both content and style.

Treetop, Vejle
A new addition to this year's Guide, Treetop comes with a setting that is nothing short of idyllic. Occupying an elegant wooden cabin amongst the trees in the middle of the Munkebjerg Forest, it certainly feels at one with nature, and its panoramic windows allow you to observe the comings and goings of all manner of fauna. The menu too, brings the outside in, via herbs, berries and flowers that tell a story centred around honesty, nature and craftsmanship.

With One Michelin Star already under its belt, Kaskis is now also the proud recipient of a Michelin Green Star. This is a place that runs like clockwork, from the careful gathering of ingredients and the cooking of the dishes, to their delivery at the table accompanied by their story – with produce either foraged from the surrounding area or sourced from local farmers, fishermen and hunters. In a fun nod to repurposing, their uniquely designed, hand-blown water glasses are crafted from their old beer bottles.Iceland

Michelin Stars and Green Stars often to go hand-in-hand, thanks to a certain chef mindset, and here is no exception. An existing holder of One Michelin Star, this truly immersive dining experience takes in many mindful aspects, from the upcycling of the chef's grandmother's kitchen cabinets to keeping the work week short and purchasing only what is needed via the use of a set menu. Ingredients are utilised from top-to-bottom, even as far as the prawn shells, while coffee grounds are used as a second infusion for caramel and to polish the copper pots!

An old manor house on the shores of Landvettersjön Lake provides a beautiful setting for this hotel restaurant, which sits within a boathouse-style annexe and offers views out across the water. Already boasting One Michelin Star in the 2024 edition of The Guide, 2025 sees it upgraded not only to Two Michelin Stars, but to a Green Star as well. The menu is an excellent showcase of Scandinavian ingredients, with herbs and veg coming from the kitchen garden, berries and mushrooms foraged from the surrounding countryside and seafood plucked from local waters. In a unique initiative, they have even cultivated their own seaweed!
