Naoki Matsuzawa says terrine embodies the spirit of French cuisine, being a dish expressing a harmony born of ingredients and ideas being packed into a trapezial shape. The classic foie gras, home-style pâté, the ratatouille and other dishes are inspired by traditional cuisine. He uses seasonal ingredients such as hamo and sanma to also express the Japanese seasons.
