MICHELIN Guide’s Point Of View

The dark interior is the creation of an artists’ collective active worldwide. On a prominently placed jet-black table is an LED screen displaying what seems an ink brush painting. Owner-chef Ryo Kataoka, a visionary of the future of vegan food, expresses his vision in the “soul food” of the Japanese people, ramen. The dashi is reduced from kombu, shiitake and vegetables. Revolutionary in both flavour and atmosphere, Vegan Ramen UZU prefigures the arrival of a new generation.
