MICHELIN Guide’s Point Of View
An izakaya by the name of Tozentei in a novel the owner-chef read while training captured his heart. Standard items on the set menu include guji steamed with ume and kombu speciality, and jako meshi and Kyoto-style pickles at the end. In season, hamo are battered, deep-fried and served on a bowl of rice; garnishing them with manganji togarashi is very Kyoto. The cooking, local sake and warm hospitality are sure to enrapture.
