MICHELIN Guide’s Point Of View

Bright red wooden trays really pop in the jet-black space. When he was in Kagoshima, the chef Takayoshi Shiozawa cooked Italian cuisine, but then did away with genres out of a desire to communicate the appeal of Japan. He traps in the flavours of the ingredients using a Gastrovac appliance. His daughter shows of her skills with the ‘Crystal Salad’ featuring surprisingly juicy vegetables. Enjoy original cuisine and a theatre-like presentation.
