MICHELIN Guide’s Point Of View
With a name that means ‘to jump’ in Chinese, this restaurant serves as a springboard for young chefs to experiment with contemporary Cantonese cooking in the open kitchen. Only three prix-fixe menus with ten-plus courses are available, each offering the same appetiser – creamy goose liver infused with Chao Zhou-style soy marinade, sprinkled with caviar and grated solid balsamic. Each course tells a story with comforting flavours and whimsical twists.
