Having trained for many years in Florence, the chef specialises in local cuisine from central Italy. The ‘Porto Recanati-style Brudet’ is a hearty soup made with lots of seafood. Containing three times as much red onion as meat, the ‘Cioncia’ oxtail and beef cheek stew is a reproduction of a local recipe. Enjoy the authentic food here with a glass of wine.
