MICHELIN Guide’s Point Of View

At the bottom of the dim staircase, you’ll find a bar-like space. The oden ingredients are prepared one dish at a time using the nimono and takiawase Japanese cooking techniques. The light dashi is flavoured with katsuo and kombu, to which is added the savouriness of chicken. No effort is spared to ensure that the eggs are evenly cooked, by boiling only eggs of the same size, which are then seasoned. The sour flavouring of the beef tendon brings some variation to the meal and has you looking forward to what might come next.
