Enjoy a choice bowl of ramen made with shijimi clams, a speciality of Lake Shinji in Shimane Prefecture. Only ingredients that have undergone quality control based on traceability are used. The ‘Kohaku’ in the name refers to the succinic acid – the umami ingredient of shellfish – used in the ramen. Order the salty ramen to enjoy that umami as-is. Made with kaeshi and chicken oil, the soy sauce-flavoured ramen has a rich, deep taste. Be prepared to wait in line.
