MICHELIN Guide’s Point Of View

Pork vindaloo is curry that originated on the southwestern coast of India in the state of Goa. It is said to be derived from the pork-based fare introduced by the Portuguese and is characterized by the use of rice vinegar with all sorts of spices. Accentuating the sourness in the spiciness brings out distinctive flavours. Enjoy various different flavours by adding some of the homemade seasonings on the table.
