The name is from the song ‘Sign’ and brings back memories to the owner-chef of his youth. Chicken oil goes well with the clear soup broth in the soy sauce-flavoured ramen. Flavouring oil is used in the salt-flavoured ramen, which features seafood dashi. Egg yolk coats the medium thickness crimped noodles of the dried boiled fish oil ramen, and the ingredients come together in harmony. The pairing of ramen and sake may be a ‘sign’ of a new trend in the industry.
