Above all else, the owner-chef values connecting with people. He visits producers and procures the ingredients through direct contracts. Because he understands the labour of the producer, he uses the ingredients without waste. A good example is the soup with seasonal fish and finely chopped vegetables featuring dashi made from fish bones. You can see a touch of creativity in all the dishes. The serving bowls are another highlight.
