To convey how good aged sake tastes, fermented foods deemed to go particularly well with it are used in the dishes. Some of the fish for the sashimi are matured and garnished with unrefined miso or fermented wasabi; other dishes are inspired by Western and Chinese cuisine, such as the slow-roasted lamb with Sichuan pepper sauce. The spicy curry at the end is a speciality that some customers come for specifically.
