MICHELIN Guide’s Point Of View
The owner-chef recruited the whole kitchen team from Jiangsu and Zhejiang. He’s been in business for 50 years and takes care of every detail in the restaurant, from furnishings to shopping for ingredients. The menu shows his ambition – to put a light, healthy spin on the classics, such as the popular dish fried prawns in puffed rice cone. The pork offal casserole in distillers grains sauce needs pre-ordering. Tilefish and crab also shine.
