So much has been said about Thierry Marx: a great traveller, savvy alchemist, a fan of tai chi, and head of the kitchens of the Mandarin Oriental – the luxury "haute couture" Parisian hotel that tailor-made this restaurant for his extravagant culinary creations Step into this new world – immaculately white and distinctly cinematic, it is like something out of A Clockwork Orange or Gattaca. Everything bears the chef's signature style, not least his unique set menus, a succession of dishes with astonishing flavours. It is now Nina Haradji, Thierry Marx's former sous-chef, who brings to life her predecessor's style: soya "risotto" with oysters and seasonal mushrooms; caviar, scallops and radishes; turbot with its roe, sea lettuce and fennel mochi.
