Picking out live critters from the tank is part of the fun – Hokkaido scallops, Thai marble goby, and even Hanasaki crab if you’re lucky. As well as the signature braised chicken stuffed with abalone and sea cucumber, do try dishes made with chicken offal, such as stock-poached leafy greens with chicken liver. Double-boiled chicken soup with conpoy and Yunnan ham is available in limited quantities, so consider pre-ordering certain items.
