Koji Koizumi creates a cuisine all his own as he delves deeply into the interplay between technique and flavour. His creativity comes to the fore in creative combinations of ingredients. A fusion of Japanese and Western approaches is the essence of Kohaku: snow crab with caviar, puffer fish milt with truffles, warabimochi (bracken-starch dumpling) with coconut. Determined to create fare found nowhere else, Koizumi invents new flavours not found in existing concepts.
