The chef’s love for Mesoamerican jewellery made him a fan of cowboy culture. As he travelled the American Southwest, Tex-Mex cuisine won him over. In Oaxaca and the Yucatan Peninsula, with their large indigenous populations, his studies convinced him to put down roots in the food of those regions. By marrying eco-friendly ingredients with Mexican tradition, ETHICA seeks to create a culture all its own.
