The chef’s approach is to transform Japanese ingredients into Chinese dishes. Combinations of ingredients like udo and fukinoto or mushrooms and ginkgo nuts go into creating a spring roll, paying homage to the Japanese tradition of seasonal expressions. Also novel is the incorporation of game, as with the boar meat steamed dumplings. The popular black vinegar pork is available year-round. Oil is used sparingly, so all the dishes are light.
