MICHELIN Guide’s Point Of View

The owner-chef aims to be the ‘town sushi restaurant’, deeply rooted in the community. He places emphasis on customer preference and convenience, offering various shuko and taking orders for individual nigiri. At the same time, the toppings are prepared faithful to Edomae tradition whether it be pickling, simmering or searing. As tuna is the star of the menu, he carries raw bluefin tuna only. While catering to the person on the street, he selects the fish carefully.
