MICHELIN Guide’s Point Of View

The first thing you notice is the mural of surging ocean waves behind the counter. The seafood comes with vegetables and first servings are char-grilled and deep-fried items. Edomae forms the basis, yet they let the flavours speak for themselves by, for example, reining in the tartness of the vinegared rice. At the end comes a soup of somen in katsuo dashi. What could be called the kappo-style ‘Ishikawa sushi’ approach here is making waves in the world of sushi.
