MICHELIN Guide’s Point Of View

This was the second branch of Shugetsu to open in Hong Kong. It’s the freshly made noodles and the soy sauce base that make them so popular. The broth is prepared with sardines, mackerel and kelp, and soy sauce that is produced by a longstanding factory in Ehime. The popular choice is Tsukemen, for which they use thick noodles to absorb the sauce’s taste more easily – you decide how large a portion you want.
