MICHELIN Guide’s Point Of View

The Venezuelan chef here has worked in some of the best kitchens in Spain, France and Hong Kong. His tasting menu reinterprets LatAm cuisine while respecting heritage, tradition and culinary roots. Specialities include 5-day-aged pigeon with mole, manioc and liver mousse bonbon. The chocolate mousse dessert Carupano 70% redefines the term ‘from scratch’ – beans are extracted from fresh cocoa fruits, fermented, roasted and ground in-house.
