Colourful dishes deliver bold flavours reminiscent of the vibrancy of the continent’s culture. Racan pigeon boasts juicy pink meat under the browned crisp skin, bursting with gamey flavour. The mole made from scratch with 21 ingredients is silky in texture, striking a balance between aromas, heat and acidity.
