MICHELIN Guide’s Point Of View
The highly original and different cuisine created by the restaurant’s eclectic chef aims to showcase a full array of culinary influences, through creative cooking inspired by his travels in France, the UK, and the Far East, including Japan, all of which have left their imprint in subtle dishes with a continual focus on top-quality Spanish ingredients. In this bright, elegant and minimalist setting, the single tasting menu features mini dishes such as Morels stuffed with guinea fowl, foie gras and Robuchon purée, Tagliolino, lobster suquet, crème fraîche and caviar for a sweet touch, Green apple and celery snow with Swiss meringue. Most of the dishes are finished at the counter, in full view of the diner!
