Not content with clocking up an impressive CV (Senderens, Flocons de Sel, Murtoli), chef Romain Desgranges is first and foremost a Saint Gervais man, and that makes all the difference. He celebrates the ingredients of his region in meticulous dishes, with game in season (deer, pheasant), old-style terrines and delicious home-made bread. A delight.
