In the Four Seasons Hotel, Anne-Sophie Pic is adding a new Alpine twist to her classics, such as a “berlingot” filled with a runny sauce made with Beaufort and Abondance cheeses and a touch of absinthe or a white millefeuille that comes in a version of Leatherwood honey, eucalyptus in fine jelly and slightly acidic blackberry, while her lamb is marinated in lemon balm and Chartreuse liqueur - so deceptively simple and yet so complex. Consummate subtlety, as much by the striking contrasts in flavours as by the textures.
