MICHELIN Guide’s Point Of View

This restaurant features sukiyaki prepared in two stages, so diners can try both the Kansai and Kanto versions of the dish. This restaurant was opened by a meat wholesaler that wanted to make known the delights of wagyu. It uses fine marbled sirloin, which fills the mouth with the sweetness of the fat. Portions are cut thick to give them real presence. Here they whip just the egg whites of raw eggs for better adhesion.
