With a wood-rich interior and tasteful Kiyomizu ceramic ware, the room has an understated elegance. The young head chef, honed with 10+ years’ experience, was trained in Osaka and his attention to detail and creative combinations of ingredients make the experience an absolute delight. Look for his clever use of kombu salt, dried persimmon and minced plum with the freshest catch, alongside Hokkaido Nanatsuboshi rice dressed in a special red vinegar blend.
