MICHELIN Guide’s Point Of View

Inspired by the taste of freshly dressed beef served by a butcher, the owner-chef set out to become one himself to introduce the world to its delicious taste. He puts his own touch on dishes from Japanese cuisine. He uses different cuts of beef for each dish, such as the thinly sliced beef tongue used in the kobujime, the chateaubriand grilled over bincho charcoal, and the sirloin steak.
