MICHELIN Guide’s Point Of View

This restaurant has long been known to locals, of course – and even some tourists. Looking about inside, you’ll see most customers chowing down on the ‘Kinshi-don’ speciality. A large Kyoto-style omelette with light dashi in the mixture, and plenty of air bubbles, is folded in half and placed like a lid on top of unagi on rice. The unagi has been steamed, then grilled over bincho charcoal, Edo-style, and the rice flavoured with sauce.
