MICHELIN Guide’s Point Of View
Pottoka, a breed of pony native to the region, is the mascot of Bayonne's rugby club. Basque ingredients may be omnipresent in the dishes (Bayonne ham, chorizo, ossau-iraty), but the chef's approach tends more towards an unpretentious, creative "bistronomy" that is in tune with the times.
