Het Seminar is an ode to nature that adopts "farm to fork" as its guiding principle. A former monastery, this upscale restaurant stands in its own grounds. From fruit and vegetables to livestock, everything is grown or reared on site – the focus is on sustainability. This approach means they only serve a surprise menu. The chef creatively showcases the harvest-fresh produce, incorporating a wealth of aromatic and tangy notes. Here, the fertility of the Dutch soil speaks for itself.
Gastronomie et durabilité
"We are self-sufficient with attention to the welfare of people, animals and nature. We have our own livestock, quail and chickens. But we also have our own vegetable gardens with unsprayed organic vegetables, fruit and herbs. We grow our vegetables within a 15-kilometre radius of the restaurant. Besides all this, we also have our own dairy processing where different cheeses and various dairy products are made, as well as our own chocolate workshop."
