The head chef is very specific about every detail in the dishes served here – from the fish shipped a few times a week from Japan, to the Akita and Niigata sushi rice blend dressed in a concoction of four vinegars. He also appears to have a liking for more rare fish, like wild-caught tuna, kinmedai and aji, as well as seasonal delicacies like hachibiki. Private rooms offer three set menus that lean more towards cooked courses than sushi.
