MICHELIN Guide’s Point Of View
In this lovely "country house" the chef chooses his ingredients well. He cooks fresh and fine cuisine for the modern palate, and some dishes having interesting Italian influences. Lunch on the terrace with a view over the lake is not to be missed.
Gastronomy & Sustainability
"The Domaine is situated within a Natura 2000 protected zone and the approach has always been to respect the environment as much as possible. In partnership with the charity Charente Nature, a beach for endangered tortoises has been created along with “toad crossings” for the many frogs in the grounds. In the kitchen, local and seasonal produce is very much to the fore, with everything grown on the estate (saffron, nuts, fruit, vegetables) certified organic."
