Michelin and illycaffè are pleased to announce illy's support of the MICHELIN Guide's European and American Green Stars. illycaffè, a global coffee industry leader in sustainable quality, and Michelin have decided to take another step forward for the planet. The two companies, which share very similar values, will work together to promote restaurant’s efforts and actions in working in a more sustainable way – like preserving resources, embracing biodiversity, or reducing food waste and the consumption of non-renewable energy.
Since its debut in 1933, and the creation of illycaffè in Trieste, the company has been driven by the same single mission : delighting everyone who loves the quality of life all around the world with the greatest coffee nature can provide, enhanced by the best technologies and sustainable practices, and the pursuit of beauty in everything they do.
Indeed, and for over 85 years, illycaffè’s strategies have been following a sustainable business model, integrating revenue and business goals with environmental and social aspects. Inspired by the 17 Sustainable Development Goals of the United Nations, illycaffè pursues economic sustainability through the sharing of its generated value, social sustainability through personal growth, and environmental sustainability through respect for the ecosystem, which translates into the principles of not polluting, not wasting, and using renewable resources. A tryptic which echoes the Michelin Group ambitions as well as the ones of role-model restaurants awarded a MICHELIN Green Star.
In illy’s view, the virtuous cycle of sustainability begins with the cup of coffee and encompasses the countries where the coffee was grown, through a strategy that rests upon four pillars: working directly with producers, transferring knowledge to them, paying them in a way that makes production sustainable, and creating a club of illy producers. Sustainable quality thus becomes the tool with which to improve the living conditions of coffee farmers and others working in this sector.
Just as an illustration of that, the company is working, in collaboration with the United Nation Industrial Development Organization, on a project called “Improving the Sustainability and Inclusiveness of the Ethiopian Coffee Value Chain through Private and Public Partnership” involving the entire Ethiopian coffee sector. Launched in 2015 and under the aegis of the Ethiopian Minister of Industry, the project aims to boost coffee production, to improve quality while helping small farmers to improve their incomes, to contribute to Ethiopia’s development and to help make it a sustainable income country by 2025.
illycaffè is also committed to an ambitious sustainability plan will lead the company to becoming carbon neutral by 2033. Part of it, and launched in July 2020, it is #ONEMAKESTHEDIFFERENCE (One Makes The Difference) initiative. Under this hashtag, illy regroups the new sustainable products and services it develops – like coffee machines which ensure significant energy saving –, and shows how sustainable quality helps protecting and improving the well-being of the planet and also reminds consumers that everyone’s actions can make a difference.
In 2021, and in recognition of illy’s actions, the company has been awarded “One of the 2021 World’s Most Ethical Company” by the Ethisphere Company, being the lonely Italian company to be included in the list since 2013.

Unveiled for the first time in January 2020 at the MICHELIN Guide France launch event, the MICHELIN Green Star is the MICHELIN Guide's newest distinction. Attributed by MICHELIN inspectors to restaurants within their selections that are the most committed to a more sustainable approach to gastronomy, the MICHELIN Green Star offers a new benchmark for customers and professionals.
By highlighting the virtuous actions of role-model restaurants, the MICHELIN Guide aims to give chefs and other committed players a framework for raising awareness on the sustainable issues surrounding gastronomy and food among the general public, businesses and the whole industry.
