From the farmer, to the gardener, to the fisherman, Héron's suppliers are all local. The season and the Dutch soil will determine what appears on the menu. Sustainability is key at this lively establishment, so dishes might feature previously unheard-of cuts of meat, a variety of preserves and foraged ingredients, and your dessert could contain fish garum. The chef will surprise you with his novel ways of putting local produce centre stage.

"We work closely with our suppliers: the farmer, the gardener, the wine supplier, the cattle breeder, the cheese maker, the fisherman. We start from what is available and in season from Dutch soil and waters. A part of our ingredients is homemade (in various ways). At Héron you see, feel, experience and taste that there are countless delicious things to be found in the area."
