Having hung out his shingle in his hometown, Taichi Tamura runs his sushi restaurant with his wife. This is a place to enjoy sushi prepared by a master in a family-oriented setting. Dishes alternate between snacks and nigiri, as he varies the presentation of items. The sushi rice is prepared with rice vinegar, to bring the sweetness of the seafood. Chub mackerel sushi paired with strips of seasoned and dried shio kombu kelp and rolled eggs matched with sea lettuce are distinctive touches.
