Here the rich sense of the season is most appealing. The head chef studied kaiseki and puts his ingenuity to work as he deep-fries the ingredients. For example, he will wrap squid in oba, do shellfish isobe age style, or garnish anago with oroshi seasoned with sweetened vinegar. He fries the seafood and vegetables in separate pans so that they each keep their flavour and fries the large pieces of sweet potato slowly to draw out their sweetness.
