The joy of freely expressing himself through dishes was what chef Saga learned at the restaurant where he trained. The creative items he makes don’t all fit the label of Italian cuisine. For example, he makes ayu into confit and garnishes it with homemade uncured ham and gazpacho sauce. He pairs hamo with eggplant and uses yuzu pepper to make it like pepperoncino. There are no standard offerings or specialities because he’s always trying new things.
