In this contemporary restaurant, Aveyron-born chef Julien Boscus serves up tasty, masterfully prepared dishes using the finest seasonal ingredients. Two shining examples are the delicious crispy tartlet filled with morel mushrooms creamed with sous-voile wine, or the sautéed sweetbreads with green asparagus from Provence (Vaucluse) steamed in citron.
