"We have prioritized preservation of seasons through our highly developed Fermentation program; projects include local apple cider vinegar, recycling bread waste through sourdough gochugang, recycling fruit, herb, and vegetable trim into vinegars and mirins, and developing mushroom and meat trim into garums and soy sauces. We have partnered with a local cider producer to upcycle apple pressings to provide a local, closed loop source for acids and sugar."
