MICHELIN Guide’s Point Of View

A must for all foodies! LAV, which stands for “Laboratorio Alfonso V”, has been enthusiastically welcomed to this beautiful city, bringing with it a new mentality and a breath of fresh air for the local food scene. The chef here, Javier del Blanco, is winning people over with his cuisine and the dining experience itself, which takes place over three acts (the entrance, kitchen and dining room) and is based around two tastings menus, one more exclusive, divided into sections (creams and soups, fish, meat etc), enabling guests to choose their preferred dish on each part of the menu.
