MICHELIN Guide’s Point Of View

Chef Niederkofler, known to one and all as Norbert, uses typical seasonal and regional ingredients such as mountain pine, juniper, flowers and spices to create his superb Alpine-flavoured dishes. Adhering closely to his “Cook the Mountain” motto, he personally sources these ingredients from local producers. His resulting cuisine is a triumph of colour and flavour, demonstrating sophisticated techniques which more than justify his place in the pantheon of Michelin starred chefs!

I founded the “Cook the mountain” movement to showcase and promote the traditional produce of the mountains. Getting to know the region’s small producers is the first step in working together to preserve the area’s wine and food traditions, at the same time as improving quality and promoting a sustainable approach.
